Jajamen are warm wheat-based noodles with cucumber, scallions, and a special meat-miso sauce, which you mix together well before eating. You can also add vinegar or rayu spicy oil, ground ginger, crushed garlic, and other condiments to taste, to make your own personalized flavor. When you've finished, you can break a raw egg into your bowl with the hot water in which the noodles were boiled and add some more meat-miso sauce to make a chi-tan soup. Many fans of jajamen claim this is an essential part of the dish, and you haven't really experienced its true joys until you've tried it.
