21st Century Museum of Contemporary Art, Kanazawa
Containing ingredients such as pork slices, green onions, bamboo shoots and spinach in simple salty soup with thin noodles, "Hakodate ramen" ranks in the top three ramen in Hokkaido together with "Sapporo Ramen" and "Asahikawa Ramen". Introduced by the Chinese in the Edo period, it evolved to become the present ramen with port city Hakodate's fresh seafood produce. It is called "Shina soba" (Chinese buckwheat) locally, or just "ramen" and is popular among the locals.
